Baked Egg in Avocado


First off, i'd like to say that i managed to make this without making a mess!!! (it helps to read comments about things before trying them lol)

I'll go first in how i made it then how it tasted.

Scoop out some of the avocado first, this is to make room for the egg.
my halves weren't very even and i ended up scooping out a little more after this picture. Though should of done just a tiny bit more on the bigger half.

Add the egg.
I used a muffin tin to keep them steady because many people complained that when trying to put it in the oven that they would rock and make a mess of the egg.

and then cook.
I didn't exactly follow the recipe. i started off at a too low of temperature and i probably cooked alittle too long because i wanted to make sure the egg was cooked.

So i cooked it and didn't make a mess....That's about the only good thing about this lol.
The egg was rubbery from my funky cooking it. Biggest thing i learned from this is that i don't like baked avocado. I managed to eat the eggs fairly fine, but i just couldn't eat the avocado.

I won't say don't try it, but just cook it right and make sure you scoop some of it out before putting the egg in.

Pudding Pancakes


These are something that i've come up with randomly one day when i was still in high school. I'm sure somewhere someone has maybe tried this or even perfected it(which i haven't yet). But i like to think of these as my special pancakes.

I don't even remember really why it came to mind to try and put pudding in pancakes. I just get random ideas of trying to see how they work together. Biggest thing that is hard about this is, how much pudding do you put in? if you put the whole pack in them then you have to add a lot of milk to thin it out enough to even make the pancakes...but then you also need to have enough pancake mix to make it not completely pudding.

With this batch, i put about half or less than half of the packet of pudding and i felt that there wasn't a lot of flavor to it. Though maybe it was just because of what pudding i used. It was a jello one like i normally use, though really any pudding should work. But the flavor was chocolate fudge, maybe it's just not a bold flavor.

I would of used my banana cream one, but i've been wanting to use it for a little banana cream pie things.

One day i will try and perfect this, but with not really having pancake eaters in my house besides me, i don't want to make pancakes too much. Maybe after my daughter gets older she will eat them more and i can make them more.

If you wanted to try and attempt these:
-mix pancake mix as it needs to be prepared
-add pudding mix, as much as you want, and mix
-add milk as needed to keep the batter thin enough.

You cook them just like normal pancakes. Over all it's simple, i just don't have the right ratios yet for making them perfect.

Bacon Egg Cups

For the love of bacon and all that is yummy!!
I've seen the pictures for this for some time and finally decided to make it because we had bacon left over. I didn't have enough to make to the full recipe, i had 11 half slices of bacon and 3 eggs. There was enough for making 4 cups and i had 3 half slices of bacon left.

It was actually really good. Sure it's just eggs and bacon(and cheese), but cooking it in the oven just seems to give it a completely yummier taste. I maybe could of cooked it for a tiny bit longer, it wasn't raw, but some of the bacon seemed like it could of been cooked more to be crispier. The eggs were fluffy. I will make these again when i have more bacon and eggs again. Maybe not even the full 12 but making the 4 again or just 2 of them. I pretty much was full after 2 of these(and the extra slices of bacon i cooked lol).

Didn't hear from my brother on what he thought of it, but my mom liked it.

A Banana + 2 Eggs = Pancakes?


Now i dont have a pretty picture of a nice stack of these....I eat while i cook pancakes, only time i have a stack is after i get full lol. This picture though is of one of the pancakes i made. I've tried this before where you just use a fork and mash the banana and 2 eggs together to get a smoother texture. I don't remember really how those turned out. For this one, i did a double batch of 1 bananas and 4 eggs and i used my food processor to mix them together. might of gave it a thinner texture, but seemed okay.
Here's some pictures from me processing it...

I ended up trying to cook on stove top and on an electric griddle....i think both are fairly a bust if you try and rush this. because it's thin and only eggs and bananas, cooking it on a high temp just doesn't really seem to work. Lower and little longer seems to work better. Also, if you are not using a non stick pan, be sure to spray or it will be even harder to flip. It's hard to flip it on it's own. In a few comments on the link i provided above, there was comments about adding coconut flour to thicken it a little to make it easier to flip. You can use normal flour, just would defeat the flourless part of this. I've read that coconut flour is good for you, and it's gluten free. Could maybe also use almond flour, just almond flour is something to watch because it's made purely from nuts (easy enough to google more info if you are interested). I wouldn't mind trying this again with using the almond flour or coconut flour to thicken it.

There was also a comment about about using this for crepes(might of been a comment on part of the pinterest post i found it through). i liked the idea of the crepes, just i didn't have any whip type topping and the pan i was using wouldn't be very good for making crepes. I did managed to make a slightly thinner one and just put some of my greek cream cheese on it then rolled it.
Tasted pretty close to a cream cheese filled crepe.

As for the taste alone, it has a banana taste to it...i'd be surprised if it didn't. I'd say it's almost like a banana muffin type taste? i ate one while it was cold and when cold it did taste a good bit like banana bread. For not having flour in it, it did still have a slight bread/pancake feel for it

For me, i find this just a pretty simple something to make if i just want to make something quick to eat and have bananas and eggs. it's an alright way to use up almost gone bad bananas. Which both reasons were why i made these when i did.

French Toast Cream Cheese Sandwich with Eggs

I've seen pictures on pinterest of this breakfast sandwich with cream cheese and blueberries. It looked good but probably wouldn't be able to make it the same way they did, not sure what machine they used in the pictures. Either way, i made my own version, using actual french toast.

I ended up trying the sandwich 2 ways to see what was easier/better to make it.
The first way i tried to put the cream cheese on right after i got both pieces of french toast done. It warmed up the cream cheese and made it harder to spread on to get it thicker than i got it.
The second way, i waited until the french toast was cool before i put the cream cheese on and then i put it back on the stove to heat up the sandwich. Made it easier because then i got to make it thicker, maybe a little too thick though lol. Here's a picture of what i mean,
I was so cream cheesed out after this lol.

For the eggs, they were just basic eggs and cheddar cheese. Tasted like how eggs are suppose to taste like lol. This is reference to my other post about the scrambled eggs i made that had cottage cheese in it. Found here [Link]

For the cream cheese i used on this, it was a cream cheese made with greek yogurt. For weight watcher points, it's good on points. I will probably make another post about the cream cheese.

Fun with Pancakes


My daughter had her 3rd birthday on May 27th, I like to try and make pancakes for her birthday, even if she doesn't eat them lol. The pancakes are....
Top: Normal
Left: Nerds
Right: Bacon Bits
Bottom: Crumbled Oreo.

For this batch, i used a product that i bought from Kohl's that was on sale. I already used it for waffles, haven't written about that yet, so i'll just write a short bit of what i was going to write on here.

This is the mix that i used. I thought it was interesting when i was making it because it called to add melted butter into the mix, i don't think i've ever seen a recipe call for that. I bet it's just for taste though. Waffles came out decent and so i wanted to use it for pancakes to try it out for both things.

When making the fun pancakes, i had to make sure i made normal ones to try it that way since this was the first time i was making pancakes for the first time with this brand. Wasn't much different than the waffles in taste since it's the same mix.
The nerds one, that one was what made me want to do the pancakes, I wanted to see how pancakes with nerds would turn out. Kinda like how you can add sprinkles and sorta make it a "birthday cake" type pancake. Eating the first one was odd. Because of cooking the nerds in it, it sorta melted the coating on it and just gave chucks of it really tart and tangy. The sugar crunch was kinda nice and fun. So i think it turned out well enough, only thing i'd change is to make sure the nerds don't get clustered together too much.
The bacon bits one came from the pinterest picture i've been seeing of you cook some bacon and then pour pancake batter over it and in a way make a bacon stuffed pancake. I didn't have normal bacon so i just used bacon bits, the real kind, not the fake red ones. I loved this one. I'm a pancake and bacon fan so putting the two together was just awesome for me lol.
The oreo one was pretty good too. It was like a cookies and cream pancake...well really that's exactly what it was because that's like all cookies and cream is, oreos.


As a "special" pancake for my daughter, that she hardly ate... I made this
i always fail at making mickey pancakes lol
